Classic Mornay Sauce

Preparing the Mornay Sauce

Add the Milk
Gradually pour in the milk while whisking to avoid lumps. Continue whisking until the mixture thickens, about 5-7 minutes.

Add Cheese and Seasonings
Remove the saucepan from heat and stir in the Gruyère cheese until melted. Add salt, black pepper, and a pinch of nutmeg to taste. Set aside.
Assembling the Croque Madame

Toast the Croissants
Preheat your oven to 375°F (190°C). Slice the croissants in half and place them on a baking sheet. Lightly toast in the oven for about 5 minutes until golden.

Layer the Ham
Remove the croissants from the oven. Place 2 slices of honey ham on the bottom half of each croissant.

Add the Mornay Sauce
Generously spoon the prepared Mornay sauce over the ham on each croissant.

Top and Bake
Place the top half of the croissants back on and return to the oven. Bake for an additional 10 minutes until the cheese is bubbly and golden.

Fry the Eggs
In a non-stick skillet, heat a small amount of oil or butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Plate and Serve
Remove the Croque Madame from the oven, and top each with a fried egg. Serve immediately and enjoy!
