Preparation of Shrimp

Clean the Shrimp
Begin by cleaning the tiger shrimp. Remove the shells and devein them carefully without breaking the shrimp.

Cook the Shrimp
Bring a pot of salted water to a boil. Add the cleaned shrimp and cook for about 2-3 minutes or until they turn pink and opaque. Remove from heat and immediately transfer to an ice bath to stop the cooking process.

Chill the Shrimp
Once cooled, drain the shrimp and pat them dry with a paper towel. Set aside in the refrigerator while you prepare the rest of the ingredients.
Preparation of Pico de Gallo

Combine Ingredients
In a mixing bowl, combine diced tomatoes, finely chopped onion, chopped cilantro, and minced jalapeño.

Add Lime Juice
Pour in the lime juice and season the mixture with salt and pepper to taste. Mix well and let it sit for 10 minutes to allow the flavors to meld.
Assembly

Plate the Dish
On a serving plate, arrange the chilled shrimp in a blossom shape or in a circular fashion.

Spoon the pico de gallo generously over the shrimp.
