Cook the Bison
In a skillet over medium heat, add the ground bison. Cook for about 5-7 minutes, breaking it apart with a spatula until fully browned and cooked through. Season with salt and pepper to taste. Drain any excess fat and stir in buffalo sauce. Remove from heat and set aside.

Prepare the Bread
Butter one side of each slice of sourdough bread with unsalted butter. This will help achieve a golden, crispy exterior when grilled.

Assemble the Sandwich
On the unbuttered side of two slices of sourdough bread, layer the cheddar cheese, cooked bison mixed with buffalo sauce, and American cheese. Top with the other two slices of bread, buttered side facing out.

Grill the Sandwich
In the same skillet used for the bison (or a clean one), place the assembled sandwiches over medium heat. Cook for 3-4 minutes on each side or until the bread is golden brown and the cheese melts. You may need to press down gently with a spatula to ensure even grilling.

Once grilled to perfection, remove the sandwiches from the skillet. Let them sit for a minute before slicing them in half. Serve with extra buffalo sauce on the side if desired.
