Prepare the Bison
In a skillet over medium heat, add the ground bison. Cook, stirring occasionally, until browned and fully cooked, about 5-7 minutes. Drain any excess fat and stir in the buffalo sauce. Set aside.

Prepare the Cheese
While the bison is cooking, shred the cheddar cheese and keep it aside. The American cheese can be left in slices.

Assemble the Sandwich
Lay out two slices of sourdough bread. On each slice, layer the cooked bison mixture evenly, followed by the shredded cheddar cheese and one slice of American cheese. Top with the remaining slices of sourdough bread.

Grill the Sandwich
In the same skillet, melt 1 tablespoon of butter over medium heat. Place the assembled sandwiches in the skillet. Grill until the bread is golden brown and crispy, about 3-4 minutes. Carefully flip the sandwiches, adding the remaining tablespoon of butter to the skillet, and grill the other side until golden and the cheeses are melted, another 3-4 minutes.

Remove the sandwiches from the skillet and let them cool for a minute. Cut in half and serve hot with additional buffalo sauce on the side if desired.
