Shrimp Po’boy Recipe

Shrimp Po'Boy Sandwich
Black Bean Chile Sauce

Method
Prepare the Black Bean Chile Sauce

Cook the Sauce
In a saucepan over medium heat, combine black beans, chili powder, cumin, garlic, onion, vegetable broth, and lime juice. Cook for about 10 minutes, stirring occasionally, until heated through and flavors meld. Add salt to taste. Set aside.
Fry the Shrimp

Prepare the Shrimp
In a bowl, mix flour, cornmeal, and cajun seasoning. In another bowl, whisk together the egg and buttermilk. Dip shrimp first into the buttermilk mixture, then dredge in the flour mixture.

Fry the Shrimp
Heat oil in a deep pan over medium-high heat. Once hot, fry shrimp in batches until golden brown and cooked through, about 3-4 minutes. Remove and drain on paper towels.
Assemble the Po'Boy

Build the Sandwich
Slice the French bread or hoagie rolls horizontally. Spread a generous amount of black bean chile sauce on the bottom half, top with fried shrimp, cucumbers, and chopped cilantro. Top with the other half of the bread.
Prepare Cajun Fries (optional)

Fry the Potatoes
In the same oil used for the shrimp, fry the cut potatoes until golden brown and crispy. Season with cajun seasoning while still hot. Serve alongside the Po'Boy.
