    Prepare the roux

    In a large pot, heat the olive oil over medium heat. Gradually whisk in the flour, stirring continuously until the mixture turns a deep brown color, about 20-30 minutes.

    Sauté the vegetables

    Add the diced onion, bell pepper, celery, and minced garlic to the roux. Sauté until the vegetables are tender, about 5-7 minutes.

    Add meats and liquids

    Stir in the sliced Andouille sausage, chicken thighs, diced tomatoes (with juice), chicken broth, bay leaves, thyme, and Cajun seasoning. Bring the mixture to a boil.

    Simmer the gumbo

    Reduce the heat to low and let the gumbo simmer for about 45 minutes, stirring occasionally. Add the shrimp in the last 10 minutes of cooking.

    Season and serve

    Season with salt and black pepper to taste. Remove bay leaves before serving. Serve the gumbo over cooked white rice and garnish with sliced green onions. Accompany with buttermilk biscuits.
