    Prepare the Hollandaise Sauce

    In a double boiler, melt the butter. In a separate bowl, whisk together the egg yolks, lemon juice, and salt. Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Season with black pepper to taste. Set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack the eggs into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes or until the whites are set and the yolks are still runny. Remove with a slotted spoon and set aside.

    Prepare the Muffins and Ham

    Toast the English muffins until golden brown. In a skillet, lightly warm the ham slices until heated through.

    Assemble the Eggs Benedict

    On each toasted muffin half, place a slice of ham, followed by a poached egg. Drizzle generously with the hollandaise sauce.
