Prepare the Sausage and Ham Mixture
In a skillet over medium heat, cook the spicy sausage until browned. Add the diced ham, bell pepper, and onion. Sauté until the vegetables are soft. Stir in the creole seasoning and cook for another 2 minutes.

Fill and Fold the Omelet
Once the eggs are mostly set, spoon the sausage and ham mixture onto one half of the omelet. Carefully fold the other half over the filling and let it cook for another 2-3 minutes until fully set.

Serve
Serve the omelet hot with grits or potatoes on the side and a warm buttermilk biscuit.
