Make the Biscuits
Preheat your oven to 425°F (220°C). In a large bowl, combine flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn onto a floured surface and knead gently. Roll out to about 1 inch thick and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Prepare the Sausage Gravy
In a large skillet over medium heat, cook the sausage until browned and crumbled. Remove excess fat, leaving about 2 tablespoons in the pan. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk until smooth and bring to a simmer. Reduce heat and cook until thickened, about 5-7 minutes. Season with black pepper.

Serve
Split the warm biscuits in half, ladle sausage gravy over the top, and serve with a side of red beans and grits.
