Prepare the Dough
In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour, sugar, and salt. Create a well in the center and add the yeast mixture, milk, egg, and melted butter. Mix until a dough forms.

Knead and Rise
Turn the dough out onto a floured surface and knead for about 5 minutes until smooth. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 to 2 hours, or until doubled in size.

Roll and Cut
Once the dough has risen, punch it down and turn it out onto a floured surface again. Roll it out to about 1/4 inch thickness. Cut into 2-inch squares or rectangles.

Fry the Beignets
In a deep pot, heat vegetable oil to 350°F (175°C). Fry the dough squares in batches for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

Dust with Sugar
While still warm, dust the beignets generously with powdered sugar. Serve hot.
