    Cook the Sausage

    In a skillet over medium heat, cook the andouille sausage until browned and heated through, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add sliced bell peppers and onion. Sauté until softened, about 5 minutes.

    Assemble the Po’Boy

    Slice the French bread in half lengthwise. Layer the cooked sausage, sautéed vegetables, and sprinkle with cheddar cheese on one side of the bread.

    Melt the Cheese

    Place the assembled Po’Boy on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

    Add Mustard and Serve

    Spread sweet & spicy mustard on the other side of the bread, close the sandwich, and serve warm with Cajun fries or a side salad.
