Method

Preparing the Black Bean Patty

  1. 1

    Make the Black Bean Patty

In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.

  2. 2

Add the finely chopped onion, minced garlic, breadcrumbs, cumin, paprika, salt, and black pepper to the mashed beans. Mix until well combined.

  3. 3

Form the mixture into patties (about 4 patties) and refrigerate for 30 minutes to firm up.

  4. 4

In a skillet, heat olive oil over medium heat. Cook each patty for about 4-5 minutes on each side until golden brown. Remove from heat and set aside.

Making the Queso

  1. 5

    Prepare the Queso

In a blender, combine the soaked cashews, nutritional yeast, lemon juice, garlic powder, salt, and water.

  2. 6

Blend until smooth and creamy. Adjust the water to reach your desired consistency.

Cooking Tater Tots

  1. 7

    Cook the Tater Tots

Prepare the tater tots according to package instructions (baking or frying). Ensure they are crispy and golden brown.

Assembling the Poutine

  1. 8

    Assemble the Dish

On a serving plate, layer the crispy tater tots as the base.

  2. 9

Top with the cooked black bean patty, followed by drizzling the queso over the top.

  3. 10

Finish by sprinkling with fresh herbs and crumbled cotija cheese.
