    Chill the Glass

    Start by chilling an old-fashioned glass by filling it with ice water. Set it aside to cool while you prepare the cocktail.

    Muddle the Sugar

    In a separate mixing glass, place the sugar cube and add the Peychaud's bitters. Muddle them together until the sugar is mostly dissolved.

    Add Rye Whiskey

    Pour the rye whiskey into the mixing glass with the muddled sugar and bitters. Fill the mixing glass with ice and stir gently until well chilled.

    Prepare the Glass

    Empty the ice water from the chilled old-fashioned glass. Add the absinthe to the glass, swirling it around to coat the interior, then discard any excess absinthe.

    Strain and Garnish

    Strain the chilled rye whiskey mixture into the prepared glass. Express the lemon peel over the drink to release its oils and then add the peel as garnish.
