Prepare the Broth
In a large pot, heat the chicken broth over medium heat. Once it starts to simmer, add soy sauce and sesame oil. Stir to combine.

Cook the Noodles
In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.

Prepare the Vegetables
Thinly slice the carrots and chop the cabbage. Add them to the simmering broth and cook for an additional 3-4 minutes until they are tender.

Cook the Pork Belly (optional)
If using pork belly, cook it in a separate pan over medium heat until crispy and browned on all sides. Remove from heat and slice thinly.
Assembly

Combine and Serve
In serving bowls, add a portion of the cooked ramen noodles. Ladle the broth with vegetables and egg over the noodles. Top with sliced pork belly (if using) and garnish with fresh herbs.
