Dough Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap it in plastic wrap and let it rest for at least 30 minutes.
Filling Preparation

Prepare the Filling
In a large bowl, mix together the ground pork, garlic, ginger, soy sauce, green onion, togarashi seasoning, and salt until well combined.
Assembly

Roll Out the Dough
After resting, divide the dough into small balls. Roll each ball into a thin circle, about 3 inches in diameter.

Fill the Potstickers
Place a small spoonful of filling in the center of each dough circle. Moisten the edges with water, fold over, and pinch to seal.
Cooking

Cook the Potstickers
Heat a non-stick skillet over medium heat, add a little oil. Place the potstickers in the skillet and cook until the bottoms are golden brown, about 3-4 minutes.

Steam the Potstickers
Add about 1/4 cup of water to the skillet, cover immediately, and let them steam for about 5-7 minutes until cooked through.
Sauce Preparation

Make the Sriracha Mayo
In a small bowl, combine mayonnaise and sriracha. Mix until well combined.

Prepare the Sweet Chili Soy Sauce
In another bowl, mix sweet chili sauce and soy sauce together. Stir in the chopped fresh herbs.
