Method

Shrimp Preparation

    Boil the Shrimp

    In a large pot, bring 4 quarts of water to a boil. Add the Old Bay seasoning and the halved lemon. Stir to combine.

    Cook the Shrimp

    Add the peeled and deveined shrimp to the boiling water. Cook for 2-3 minutes, or until the shrimp turn pink and opaque.

    Ice Bath

    Remove the shrimp from the pot and immediately place them in a bowl of ice water to stop the cooking process. Allow the shrimp to cool completely.

    Drain and Chill

    Once cooled, drain the shrimp and refrigerate until ready to serve.

Old Bay Aioli Preparation

    Combine Ingredients

    In a medium bowl, combine mayonnaise, minced garlic, lemon juice, Old Bay seasoning, and salt to taste.

    Mix Well

    Whisk until smooth and well combined. Adjust seasoning as needed.

    Chill

    Cover and refrigerate the aioli until serving time.

Grilled Tomatillo Cocktail Sauce Preparation

    Grill the Tomatillos

    Preheat a grill to medium-high heat. Place the halved tomatillos and chopped jalapeño on the grill. Grill for about 5-7 minutes, or until they are charred and softened.

    Blend the Sauce

    Transfer the grilled tomatillos and jalapeño to a blender. Add chopped red onion, cilantro, lime juice, and salt to taste.

    Puree

    Blend until smooth, adjusting seasoning as needed. Transfer the cocktail sauce to a serving bowl.

    Chill

    Refrigerate the cocktail sauce until ready to serve.

Garnishing

    Prepare Fresh Herbs

    Chop fresh parsley and dill. Set aside for garnishing.
