Cook the Rice
Rinse the white rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender. Remove from heat and let it sit covered for an additional 5 minutes.

Prepare the Pickled Radish
If using store-bought pickled radish, simply slice them into thin strips. If making at home, slice the radish thinly, and marinate in a mixture of vinegar, sugar, and salt for at least 30 minutes.

Make the Soy Dipping Sauce
In a small bowl, combine soy sauce with a little bit of water and sesame oil (optional) to taste. Adjust the flavor based on your preference.

Assemble the Wraps
Take a lettuce leaf and add a spoonful of cooked rice, followed by a generous portion of bulgogi. Top with pickled radish and drizzle with soy dipping sauce. Wrap it up and enjoy!
