Method

Making the Dough

    Activate the Yeast

    In a bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and mix until a dough forms.

    Knead the Dough

    Lightly flour a surface, and knead the dough for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a towel, and let it rise for about 1 hour.

    Shape the Pretzels

    Preheat the oven to 450°F (230°C). Once the dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

    Prepare the Baking Soda Bath

    In a large pot, bring 10 cups of water and baking soda to a boil. Carefully add each pretzel for about 30 seconds, then remove and place on a baking sheet.

Topping the Pretzels

    Apply Everything Seasoning

    Sprinkle the Everything Seasoning evenly over the pretzels while they are still wet from the baking soda bath.

    Bake the Pretzels

    Bake the pretzels in the preheated oven for about 12-15 minutes or until golden brown.

Making the Cheese Sauce

    Make the Roux

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until bubbly.

    Add Milk and Cheese

    Gradually whisk in the milk, stirring constantly until the mixture thickens. Add the cheddar cheese and salt, stirring until melted and smooth.
