Duck Fat Washing the Spirits

Prepare Duck Fat
Melt the duck fat in a small saucepan over low heat. Once liquid, let it cool slightly.

Strain the Mixture
After 24 hours, place a fine mesh strainer lined with cheesecloth over a bowl. Pour the contents of the jar into the strainer to separate the fat from the spirits. Discard the solidified duck fat and transfer the washed spirits back to the bottle.
Syrup Preparation

Make the Syrup
In a saucepan, combine the diced carrots, orange juice, and sugar. Bring to a simmer over medium heat and cook for about 20 minutes, stirring occasionally, until the carrots are soft and the mixture thickens.

Strain the Syrup
Once thickened, remove from heat and strain the mixture through a fine mesh sieve, pressing on the solids to extract as much liquid as possible. Let it cool before using.
Assemble the Drink

Mix the Drink
In a shaker, combine 60 ml of the duck fat washed spirits, 30 ml of the carrot and orange syrup, and 10 dashes of local blood orange bitters. Fill the shaker with ice and shake vigorously for about 15 seconds.

Serve
Strain the mixture into a chilled cocktail glass and garnish with a small handful of fresh arugula floated on top.
