    Prepare Chorizo

    In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the chorizo sausage and cook for about 5-7 minutes or until browned and cooked through, breaking it apart with a spatula.

    Sauté Vegetables

    Add the diced bell pepper and minced garlic to the skillet with the chorizo. Sauté for another 3-4 minutes until the bell pepper becomes tender.

    Add Rice

    Stir in the cooked jasmine rice, ensuring it mixes well with the chorizo and vegetables. Add the gluten-free soy sauce and stir to combine evenly.

    Scramble Eggs

    Push the rice mixture to one side of the skillet. In the empty side, add the remaining tablespoon of olive oil and crack the eggs into the skillet. Scramble the eggs until fully cooked, then mix them into the rice.

    Season

    Season the fried rice with salt and black pepper. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.

    Remove from heat and garnish with chopped green onions before serving.
