    Prepare the Crust

    Preheat your oven to 325°F (163°C). In a medium bowl, mix together the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly moistened.

    Press the mixture firmly into the bottom of a 9-inch springform pan. Make sure it is evenly spread and compacted. Bake for 10 minutes in the preheated oven, then remove and let cool while you prepare the filling.

Filling

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Gradually add the granulated sugar, sour cream, and vanilla extract to the cream cheese, mixing until well combined. Scrape down the sides of the bowl as needed.

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix. Finally, add the all-purpose flour and mix until just combined.

    Pour the filling over the cooled crust in the springform pan, spreading it evenly.

    Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Topping

    If using fresh berries, rinse them under cold water and pat dry. Toss them with powdered sugar in a bowl to coat lightly.
