Cooking the Rice

Prepare the Rice
In a medium pot, combine 1 cup of rice with 2 cups of water. Bring to a boil over high heat, reduce to low heat, cover, and simmer for about 15-20 minutes until the rice is cooked and water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

Cook the Bulgogi
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the Bulgogi beef or chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Sauté Vegetables
In the same skillet, add another tablespoon of oil if needed. Add the sliced onion, bell peppers, mushrooms, and asparagus. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.

Combine Ingredients
Return the cooked Bulgogi to the skillet with the vegetables. Drizzle with chili soy sauce and toss everything together to coat evenly. Cook for an additional 2-3 minutes to heat through.

Plate and Garnish
Serve the stir-fry over a bed of rice. Top with fresh herbs and a sprinkle of pepita dukkah for added flavor and texture.
