Black Bean Patty Preparation

    Prepare the Black Bean Mixture

    In a large mixing bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the breadcrumbs, chopped onion, minced garlic, cumin, chili powder, salt, and pepper to the mashed beans. Mix until well combined.

    Form Patties

    Divide the mixture into 8 equal portions and form each portion into a patty.

    Grill the Patties

    Heat olive oil in a grill pan over medium heat. Grill the patties for 4-5 minutes on each side until golden brown and heated through.

Coleslaw Preparation

    Mix Coleslaw Ingredients

    In a bowl, combine the shredded cabbage and grated carrot.

    Prepare the Dressing

    In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper.

    Combine Coleslaw and Dressing

    Pour the dressing over the cabbage and carrot mixture and toss until well coated. Set aside to chill.

Assembling Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Place a grilled black bean patty on each tortilla. Top with coleslaw, crumbled Cotija cheese, fresh herbs, and a sprinkle of Pepita Dukkah.

    Add Your Side

    Select one of the sides (Mexican rice, refried beans, or guacamole) and serve alongside the tacos.
