Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Rinse Black Beans
Open the can of black beans, drain, and rinse under cold water. Set aside.

Stir Fry Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chopped vegetables (bell peppers, onion, mushrooms, and asparagus) and stir fry for about 5-7 minutes, or until they are tender-crisp.

Add Black Beans and Sauce
Add the rinsed black beans to the skillet, along with the sweet chili soy sauce. Stir well to combine and cook for an additional 2-3 minutes until everything is heated through.
Serving

Plate the Dish
Serve the cooked rice on plates, topped with the black bean stir fry mixture. Garnish with fresh herbs and a sprinkle of pepita dukkah before serving.
