Beef Marinade

Prepare the Marinade
In a medium bowl, combine sweet chili tamari, grated ginger, minced garlic, lime juice, and black pepper.

Marinate the Beef
Cut the shoulder tender beef into 1-inch cubes and add to the marinade. Mix well to ensure the beef is coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare Skewers
Soak wooden skewers in water for 30 minutes to prevent burning. After marinating, thread the marinated beef cubes and pineapple chunks onto the skewers, alternating between beef and pineapple.

Garnish
Once grilled, sprinkle fresh cilantro and mint over the skewers before serving.
Rice

Cook the Rice
In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.
Cashew Dukkah

Prepare the Dukkah
In a dry skillet over medium heat, toast cashews, coriander seeds, cumin seeds, and sesame seeds until fragrant, about 5-7 minutes. Let cool, then grind in a food processor or mortar and pestle with salt until coarsely ground.
