Beef Marinade

Prepare the Marinade
In a large bowl, combine the soy sauce, sweet chili sauce, minced garlic, grated ginger, and black pepper. Mix well.

Marinate the Beef
Add the beef tips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.
Pepita Dukkah

Toast the Seeds
In a dry skillet over medium heat, toast the pepitas, cumin seeds, coriander seeds, and sesame seeds until fragrant, about 5-7 minutes. Stir occasionally to prevent burning.

Blend the Dukkah
Once toasted, let the seeds cool slightly, then transfer to a food processor. Add salt and pulse until you achieve a coarse texture. Set aside.

Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add the rice and salt, cover, and reduce heat to low. Cook for 15-20 minutes, or until the rice is tender and water is absorbed.
