Beef Marinade

Beef Marinade

    Prepare the Marinade

    In a large bowl, combine the soy sauce, sweet chili sauce, minced garlic, grated ginger, and black pepper. Mix well.

    Marinate the Beef

    Add the beef tips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.

Pepita Dukkah

    Toast the Seeds

    In a dry skillet over medium heat, toast the pepitas, cumin seeds, coriander seeds, and sesame seeds until fragrant, about 5-7 minutes. Stir occasionally to prevent burning.

    Blend the Dukkah

    Once toasted, let the seeds cool slightly, then transfer to a food processor. Add salt and pulse until you achieve a coarse texture. Set aside.

Skewers

    Assemble the Skewers

    Preheat the grill to medium-high heat. Thread the marinated beef tips, pineapple chunks, bell pepper, and red onion onto the skewers, alternating as you go.

    Grill the Skewers

    Place the assembled skewers on the grill and cook for 10-15 minutes, turning occasionally until the beef is cooked through and has nice grill marks.

Rice

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add the rice and salt, cover, and reduce heat to low. Cook for 15-20 minutes, or until the rice is tender and water is absorbed.

    Fluff the Rice

    Remove the saucepan from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.

Serving

    Serve the Dish

    On a serving platter, place a scoop of rice, top with grilled skewers, and sprinkle generously with pepita dukkah and fresh herbs.
