    Preheat your grill to medium-high heat (about 400°F / 200°C).

    Rinse the branzino under cold water and pat dry with paper towels.

    Rub the outside and inside of the fish with olive oil, salt, and pepper.

    Stuff the cavity of the fish with parsley, thyme, rosemary, sliced garlic, and lemon slices.

Grilling

    Place the stuffed branzino on the grill. Grill for 6–7 minutes on each side, or until the skin is crispy and the flesh is opaque and flakes easily.

    Use a fish spatula to carefully flip the fish to prevent tearing the skin.

Serving

    Remove the fish from the grill and let rest for 2 minutes.

    Drizzle with extra virgin olive oil, garnish with fresh herbs, and serve with lemon wedges.
