Panna Cotta Base

Prepare Panna Cotta

Bloom Gelatin

In a small bowl, sprinkle the unflavored gelatin over 3 tablespoons of cold water. Let it sit for 5–10 minutes to bloom.

Heat Cream Mixture

In a saucepan over medium heat, combine the heavy cream, milk, and sugar. Stir until the sugar is dissolved and the mixture is hot but not boiling.

Add Gelatin and Vanilla

Remove the cream mixture from heat. Add the bloomed gelatin and stir until completely dissolved. Stir in the vanilla extract.

Pour and Chill

Pour the mixture into serving glasses or ramekins. Allow to cool slightly, then refrigerate for at least 4 hours, or until set.

Make Berry Topping

Prepare Berries

In a bowl, combine the mixed berries, sugar, and lemon juice. Let sit for 15–20 minutes until the berries release their juices.

Top and Serve

Spoon the berry mixture over the chilled panna cotta just before serving.
