Marinate the Chicken
In a large bowl, combine buttermilk and hot sauce. Add chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating
In another bowl, mix together flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Bread the Chicken
Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to adhere. Shake off excess flour.

Fry the Chicken
Carefully place the breaded chicken thighs in the hot oil. Fry for about 5-7 minutes per side, or until golden brown and cooked through. Use a thermometer to ensure internal temperature reaches 165°F (74°C).

Make the Aioli
In a small bowl, mix mayonnaise, minced garlic, and lemon juice. Adjust seasoning with salt if necessary.

Assemble the Sandwich
Toast the potato rolls if desired. Spread aioli on each roll, add a piece of fried chicken, top with coleslaw, and pickled jalapeños. Close the sandwich and serve.
