Method
Preparation and Cooking
- 1
Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thick strips, about 1/4 inch wide, to form fries.
- 2
Soaking the Fries
Place the cut fries into a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch, resulting in crispier fries.
- 3
Heating the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature.
- 4
Frying the Fries
Drain the soaked fries and pat them dry with a kitchen towel. Carefully add a batch of fries to the hot oil and fry for about 5-7 minutes, or until golden brown and crispy. Do not overcrowd the pot.
- 5
Draining and Seasoning
Remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, season with salt, pepper, and paprika to taste.
- 6
Serving
Serve the hand-cut fries hot with your favorite dipping sauces.
