Method

Prepare the Tart

    Roast Cherry Tomatoes

    Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, pepper, and balsamic vinegar. Spread on a baking sheet and roast for 20-25 minutes until blistered.

Make Basil Pesto

    Blend Ingredients

    In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, and salt. Blend while slowly adding olive oil until smooth.

Prepare Balsamic Pearl Onions

    Cook Onions

    In a small saucepan, combine pearl onions, balsamic vinegar, and honey. Simmer on low heat for about 15 minutes until onions are tender and the sauce thickens.

Roast Garlic

    Roast Garlic

    Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast in the oven for 30-35 minutes until soft.

Grill Sourdough

    Prepare Bread

    Brush sourdough slices with olive oil and grill on medium heat for 2-3 minutes per side until golden and crispy.

Assemble the Dish

    Plate the Dish

    On a serving platter, place the roasted cherry tomatoes, drizzle with basil pesto, add balsamic pearl onions, and serve with roasted garlic and grilled sourdough slices. Top with a ball of burrata cheese.
