Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn out onto a floured surface, knead gently, and roll out to about 1-inch thickness. Cut into rounds and place on a baking sheet.

Bake the Biscuits
Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let cool slightly.

Make the Sausage Gravy
In a skillet over medium heat, cook the sausage until browned and crumbled. Sprinkle the flour over the sausage and stir until combined. Slowly pour in the milk, stirring continuously until the gravy thickens. Season with salt, black pepper, and red pepper flakes to taste.

Serve
Split the biscuits in half and ladle the sausage gravy over the top. Serve warm.
