    Make the Marinade

    In a blender, combine pineapple juice, orange juice, dried chilies, garlic, cumin, oregano, salt, black pepper, vinegar, and olive oil. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into chunks and place them in a large bowl. Pour the marinade over the pork, making sure it's well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your grill or oven to medium-high heat. Remove the pork from the marinade and grill or roast until it reaches an internal temperature of 145°F, about 20-25 minutes, turning occasionally.

    Prepare the Toppings

    While the pork is cooking, chop fresh cilantro and onion. Prepare lime wedges for serving.

    Once the pork is cooked, let it rest for a few minutes before slicing. Serve it on tortillas with chopped onion, fresh cilantro, and a squeeze of lime.
