1. Cook the Cabeza
In a large pot, cover the beef head meat with water and add salt and pepper. Bring to a boil, then reduce heat and simmer for 2-3 hours until the meat is tender. Remove from heat and let cool slightly.
2. Shred the Meat
Once cooled, remove the meat from the bones and shred it into small pieces.
4. Assemble the Burritos
Spread a spoonful of refried beans on each tortilla, add a portion of shredded cabeza meat, sprinkle with diced onions, cilantro, and shredded cheese.
5. Add Toppings
Top with sour cream and salsa. Squeeze lime juice over the filling.
6. Roll the Burrito
Fold in the sides of the tortilla and roll it up tightly from the bottom.
7. Serve
Cut in half if desired and serve with extra salsa and lime wedges on the side.
