Bone Marrow Bread Pudding

Harissa Sauce

Leeks and Onions

Method

Wagyu Beef

  1. 1

    Prepare the Wagyu Beef

Preheat your oven to 375°F (190°C). Rub the Wagyu beef roast with olive oil, then season generously with salt and black pepper.

  2. 2

    Roast the Beef

Place the seasoned roast on a roasting rack in a roasting pan. Roast in the preheated oven for about 45-60 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Let it rest for 15 minutes before slicing.

Bone Marrow Bread Pudding

  1. 3

    Prepare the Bread Pudding Mixture

In a mixing bowl, combine the bone marrow, stale bread, milk, eggs, minced garlic, thyme, salt, and black pepper. Stir until the bread is well coated and the mixture is uniform.

  2. 4

    Bake the Bread Pudding

Transfer the mixture to a greased baking dish. Bake in the oven at 375°F (190°C) for 30-35 minutes, or until the top is golden brown and the pudding is set.

Harissa Sauce

  1. 5

    Make the Harissa Sauce

In a small bowl, mix the harissa paste with olive oil and lemon juice until well combined. Adjust seasoning to taste.

Leeks and Onions

  1. 6

    Sauté the Vegetables

In a skillet, melt the butter over medium heat. Add the sliced leeks and onions, then season with salt and black pepper. Sauté for about 10-15 minutes until the vegetables are soft and caramelized.
