Caramelize the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes until they are golden brown and caramelized.

Add Garlic

Mince the garlic cloves and add them to the caramelized onions. Cook for an additional 2 minutes until the garlic is fragrant.

Add Broth and Seasoning

Pour in the vegetable broth and add salt and black pepper. Bring the mixture to a simmer and let it cook for 15 minutes to allow the flavors to meld.

Blend the Soup

Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches to puree.

Add Gruyère Cheese

Stir in the grated Gruyère cheese until melted and well combined. Adjust seasoning if necessary.

Garnish and Serve

Chop the chives and sprinkle them over the soup before serving. Serve hot with garlic bread pudding on the side.
