Prepare the Salt Cod
Soak the salt cod in cold water for 24 hours, changing the water several times. After soaking, drain and flake the fish into small pieces.

Mix the Fritter Batter
In a mixing bowl, combine the flaked salt cod, all-purpose flour, baking powder, and black pepper. Finely chop the green onions and parsley, then add them to the mixture. Stir in the egg until everything is well combined.

Season the Mixture
Taste the mixture and add salt if needed, keeping in mind that the salt cod is already salty.

Heat the Oil
In a deep pot or frying pan, heat the vegetable oil over medium-high heat until hot.

Fry the Fritters
Using a tablespoon, drop spoonfuls of the fritter batter into the hot oil. Fry for about 3-4 minutes on each side or until golden brown. Remove and place on paper towels to drain excess oil.
Garlic & Malt Aioli

Prepare the Aioli
In a small bowl, combine mayonnaise, minced garlic, malt vinegar, and lemon juice. Mix well until smooth.

Season the Aioli
Taste the aioli and add salt according to your preference.

Serve
Serve the hot salt cod fritters with the garlic & malt aioli on the side for dipping.
