    Prepare the Vegetables

    Preheat the oven to 200°C (400°F). Peel and dice the butternut squash into small cubes. Clean the mushrooms and slice them into halves or quarters, depending on their size.

    Roast the Squash and Mushrooms

    In a mixing bowl, toss the diced butternut squash and mushrooms with 1 tablespoon of olive oil, salt, and black pepper. Spread them out on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and lightly caramelized.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions, usually until they float to the surface. This typically takes about 2-3 minutes. Once cooked, drain and set aside.

    Make the Pistachio-Ginger Sauce

    In a blender or food processor, combine the roasted pistachios, grated ginger, minced garlic, and vegetable broth. Blend until smooth and creamy. If the mixture is too thick, add a bit more broth until you reach the desired consistency. Adjust seasoning with salt and pepper if necessary.

    Combine Everything

    In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the cooked gnocchi and sauté for about 2-3 minutes until they are slightly crispy. Add the roasted squash and mushrooms, along with the pistachio-ginger sauce. Gently toss everything together to coat the gnocchi and vegetables in the sauce.

    Remove from heat and garnish with chopped fresh parsley. Serve immediately while hot.
