In a large mixing bowl, combine the water, sugar, and yeast. Stir gently until the sugar and yeast are fully dissolved.

Add the lemon zest and mint leaves to the mixture. Stir well to ensure the flavors are evenly distributed.
Fermentation

Let it Ferment
Cover the bowl with a clean cloth and let it sit at room temperature for 24 to 48 hours. The mixture should bubble and expand, indicating that fermentation is occurring.

Check the Flavor
After 48 hours, taste the mixture to see if the flavor has developed to your liking. If not, let it ferment for a few more hours.
Bottling

Bottle the Mixture
Once the fermentation is complete, strain the mixture into clean bottles, leaving some space at the top. Seal tightly.

Place the bottles in the refrigerator to chill. The beverage is best served cold.
