In a medium bowl, whisk together soy sauce, mirin, sake, brown sugar, grated ginger, and minced garlic until the sugar is completely dissolved.

Place the black cod fillets in a large zip-top bag or shallow dish. Pour the marinade over the fish, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 8 hours, or overnight for best results.

Preheat your oven to 400°F (200°C) to prepare for baking the black cod.
