Burger Patties

Mix and portion

In a bowl, combine 0.5 lb ground beef and 0.5 lb ground brisket. Sprinkle in 1 tsp kosher salt and 0.5 tsp freshly ground black pepper. Gently fold together with a spatula or your hands until just combined — do not overwork. Divide the mixture into four equal portions (about 4 oz each). Form each portion into a loose ball, then flatten into 3/4"-thick discs, slightly larger than the buns (they will shrink as they cook).

Preheat cooking surface

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot, about 4–5 minutes. Add 1 tablespoon neutral oil and spread to coat the surface.

Cook patties

Place two patties in the hot pan (do not overcrowd). Let cook undisturbed for 3 minutes to develop a crust. Flip once, then immediately place one American cheese slice on each patty. Reduce heat to medium and cook another 2–3 minutes until internal temperature reaches 155–160°F (for medium-well; adjust to preference). Repeat with remaining two patties. If using a griddle, you can press lightly with a spatula for more contact (optional) but avoid flattening them too thin.

Sauté onions

While the patties cook, thinly slice 1 medium yellow onion. In a separate skillet over medium heat, melt 1 tablespoon unsalted butter. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, for 8–10 minutes until soft and lightly caramelized. If they brown too quickly, lower the heat and continue to cook until sweet and golden.

Cook bacon

In another pan or after the patties are done, add the 6 bacon strips in a single layer and cook over medium heat until crispy, about 3–5 minutes per side depending on thickness. Transfer to a paper towel-lined plate to drain and keep warm. Alternatively, bake bacon on a sheet at 400°F for 12–15 minutes.

Pickles and mayo

Have 8 dill pickle slices ready. In a small bowl, stir 1/2 cup mayonnaise to ensure it's spreadable; season with a pinch of salt or a few drops of lemon juice if desired.

Buns & Assembly

Toast buns

Split 4 burger buns. In a clean skillet over medium heat, melt 2 tablespoons unsalted butter. Place buns cut-side down and toast until golden brown, about 1–2 minutes. Remove from heat.

Assemble The Oozy Burger

Spread about 1 tablespoon mayonnaise on the bottom half of each toasted bun. Place the hot, cheese-melted brisket-blended patty on top of the mayo. Add 2 slices of crispy bacon per burger, then a generous mound of sautéed onions. Top with 2 dill pickle slices. Finish with the top bun. Press gently to set.

Serve

Serve immediately while the cheese is oozy and patties are hot. Recommended accompaniments: fries, onion rings, or a simple slaw.
