Boneless Chicken
Prep chicken
Trim any fat from the chicken breasts and cut into even bite-sized pieces, about 1 to 1 1/2 inches. Pat the pieces dry with paper towels to help the batter adhere.
Season the raw chicken pieces with 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, and 1 tsp paprika. Toss to coat evenly and set aside while you prepare the batter (10–15 minutes).

Make dry mix
In a shallow bowl or medium mixing bowl, whisk together 1 cup all-purpose flour, 1 tbs cornstarch, 1/2 tsp baking powder, 1/2 tsp salt, and 1/2 tsp black pepper until uniform.
Make wet mix
In a separate bowl, whisk 1 egg with 1/2 cup buttermilk and 1 tsp hot sauce (optional) until smooth.
Dredge method: For best crispness, first coat each seasoned chicken piece lightly in the dry flour mix, then dip into the wet buttermilk-egg mixture, and finally toss again in the dry flour mix so each piece has a double coating. Place coated pieces on a wire rack while you heat the oil.

Pour about 3 cups neutral oil into a heavy-bottomed pot or Dutch oven to a depth of about 1 1/2 to 2 inches. Heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread or a pinch of batter; it should sizzle and brown gradually, not burn instantly.
Fry in batches: Gently lower 6–8 pieces (do not overcrowd) into the hot oil using a slotted spoon or spider. Fry, turning occasionally, until golden brown and cooked through, about 4–5 minutes per batch depending on piece size. Internal temperature should reach 165°F (74°C).
Transfer fried pieces to a wire rack set over a baking sheet (or paper towels) to drain. Keep in a warm oven (200°F / 95°C) while you finish remaining batches so they stay crisp.
Sauce (Buffalo-style)
Make sauce
While the chicken fries or immediately after, melt 2 tbs unsalted butter in a small saucepan over low heat. Stir in 1/2 cup hot sauce, 1 tsp apple cider vinegar, 1 tsp honey or 1 tsp brown sugar (optional), 1/4 tsp garlic powder, and 1/8 tsp salt. Warm gently, whisking until smooth and slightly emulsified. Do not boil. Taste and adjust sweetness or vinegar for desired balance.
Toss fried chicken in sauce: Place the drained hot fried chicken in a large bowl. Pour the warm sauce over the pieces and toss gently until each piece is evenly coated. If you prefer saucier wings, add more sauce; for tossed-but-crisp, add less and serve additional sauce on the side.
To Serve
Notes: If you prefer oven-finished or baked boneless wings, bake coated pieces on a preheated 425°F (220°C) sheet for 12–15 minutes, flipping halfway, then toss in sauce. For extra crispness after baking, broil 1–2 minutes but watch closely.
