Mix the meat

In a large bowl, combine ground brisket and ground chuck. Add grated onion, minced garlic, pickle juice, brown sugar, Worcestershire sauce, kosher salt, black pepper, and smoked paprika. Mix gently with your hands or a fork until ingredients are evenly distributed — avoid overworking the meat to keep patties tender.

Portion & shape

Divide the mixture into two equal portions (about 10–12 oz each). Form each portion into a loose ball, then gently flatten into a patty about 3/4-inch thick and slightly wider than your buns (they will shrink while cooking). Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Chill briefly (optional)

If time allows, chill the patties for 15–30 minutes to help them hold together when cooking.

Cook the patties

Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 tablespoon of oil or butter. When shimmering, add the patties. Cook undisturbed for 3–4 minutes until deeply browned on the first side. Flip and cook another 2–3 minutes for medium (adjust time for desired doneness).

Add cheeses

About 1 minute before the patties finish, place 1 American cheese slice and half a pepper jack slice on each patty (or stack 2 American + 1 pepper jack as described). Cover the pan with a lid to melt the cheese for about 45–60 seconds until fully melted.

Sweet & Spicy Sauce

While the patties cook, combine mayonnaise, ketchup, Sriracha, honey, sweet pickle relish, apple cider vinegar, salt, and black pepper in a small bowl. Whisk until smooth and taste; adjust heat with more Sriracha or sweetness with more honey as desired. Refrigerate until assembly.

Assembly & Toppings

Toast the buns

Spread softened butter on the cut sides of the buns. In a clean skillet over medium heat, toast buttered sides down until golden-brown, about 1–2 minutes. Remove from heat.

Build the burger

Spread a generous tablespoon (or to taste) of the sweet & spicy sauce on both the top and bottom bun. Place shredded lettuce on the bottom bun, add a cheese-topped brisket patty, then layer tomato slices, pickles, and red onion rings. Top with the second cheese-topped patty (if stacking two), more sauce on the top bun, then close the burger.

Serve

Serve immediately while hot. Optionally serve with fries or a side salad. Leftover sauce can be refrigerated up to 4 days.
