Preheat and prep

Preheat the oven to 350°F (175°C) or set a countertop oven/toaster oven to medium. If using a microwave, have a microwave-safe plate ready.

Arrange chips

Spread 3 cups of tortilla chips in an even single layer on an oven-safe plate or small baking sheet. Try to avoid large overlapping stacks so cheese melts evenly.

Distribute butter (optional)

If using, dot or lightly brush 1 tsp melted butter over the chips to help them crisp and add mild flavor. This step is optional for kids.

Add cheese

Combine 3 tbs shredded cheddar and 3 tbs shredded Monterey Jack and sprinkle the mixture evenly over the chips so most chips get some cheese.

Heat until melted

Oven method: Bake at 350°F (175°C) for 5–7 minutes or until cheese is fully melted and bubbly. Toaster oven: 4–6 minutes. Microwave method: Microwave on high for 30–45 seconds, checking at 20–second intervals to avoid overheating.

Finish and serve

Carefully remove the plate from the oven or microwave (it will be hot). Let cool 1–2 minutes so cheese sets slightly. Serve warm on a child-friendly plate.

Add grilled chicken (optional)

If adding grilled chicken, sprinkle the 2 oz diced grilled chicken evenly over the chips before adding the cheese so the meat warms through while the cheese melts. Proceed with heating as directed above.
