Prepare bread and cheese

Lay out 8 slices of bread on a clean work surface. If you prefer a creamier melt, fold each slice of American cheese in half and, if using, brush the inside of one slice of bread lightly with about 1/2 teaspoon milk (spread thinly) to help the cheese soften while toasting.

Assemble sandwiches

Place one slice of cheese (or two folded halves) on 4 of the bread slices. Top each with a second slice of bread to form 4 sandwiches. Press gently to seal.

Butter the bread

Spread about 1 teaspoon of softened unsalted butter evenly over the outside face of each sandwich (both top and bottom). Use the remaining butter to re-butter as needed while cooking. If butter is cold, microwave in 5–10 second bursts until spreadable.

Cook on skillet

Heat a large nonstick skillet or griddle over medium-low to medium heat (about 325–350°F if using an infrared thermometer). Place 2 sandwiches in the skillet, buttered side down. Cook 3–4 minutes undisturbed until the bottom is golden brown. Reduce heat slightly if browning too quickly.

Flip and finish

Gently flip sandwiches with a spatula. Cook another 2–3 minutes until the second side is golden and the cheese inside is melted. If cheese is not fully melted, cover the skillet with a lid for 30–60 seconds to trap heat and help melting.

Keep warm and finish remaining sandwiches

Transfer finished sandwiches to a warm plate and tent with foil. Repeat cooking with the remaining sandwiches, adding a little more butter to the skillet if needed.

Cut and season

Let sandwiches rest 1 minute, then cut each sandwich diagonally into two triangles (or into strips for little hands). If desired, sprinkle a light pinch (about 1/8–1/4 tsp) of black pepper over the cut surface and a tiny sprinkle of chopped parsley for color.

While the first sandwiches are cooking, place baby carrot sticks and apple slices in a small bowl or on the plate. Serve ketchup or ranch in a small ramekin for dipping.

If you want the apple slices to stay fresh-looking, toss them lightly with a teaspoon of lemon juice (optional) before plating.

Serving

Plate one grilled cheese sandwich (cut) per child with about 1/4 cup carrot sticks and 1/4 cup apple slices. Add a small ramekin of ketchup or ranch on the side. Serve warm.
