Fried Shrimp
Prep shrimp
Pat the 6 shrimp dry with paper towels. If not already deveined, devein and remove shell except leave tails on for a kid-friendly look. Keep shrimp cold until ready to bread.
Prepare dredging stations
In one shallow bowl, whisk together 1 cup flour, 2 tablespoons cornstarch, 0.5 teaspoon black pepper, 1 teaspoon salt, 0.5 teaspoon paprika, and 0.25 teaspoon garlic powder. In a second bowl, whisk 1 large egg with 3 tablespoons milk. In a third shallow bowl, combine 3 tablespoons panko and 3 tablespoons plain breadcrumbs.
Bread the shrimp
Working one at a time, lightly coat each shrimp in the flour mixture, shake off excess, dip into the egg wash, then press into the breadcrumb mixture to coat evenly. Place breaded shrimp on a wire rack or tray while you heat the oil.
Heat oil
Pour about 2 cups vegetable oil into a heavy skillet (about 10–12 inch) to a depth of roughly 1/2 to 3/4 inch. Heat over medium-high until the oil reaches 350°F (175°C) or a breadcrumb dropped in sizzles and browns in about 30–45 seconds. If you don't have a thermometer, maintain a steady medium-high heat and test with one shrimp.
Drain
Transfer fried shrimp to a paper towel-lined plate or wire rack to drain excess oil. Lightly season with a pinch of salt immediately, if desired. Keep warm in a low oven (200°F / 90°C) while you finish fries.

Prep potato
Wash and peel the potato if desired. Cut into 1/4-inch to 1/3-inch sticks for classic fries. Rinse cut fries under cold water until water runs clearer to remove excess starch, then pat very dry with paper towels — dryness helps them crisp.
Par-cook (optional for crispness)
For a small single-serving portion, you can par-cook the fries in the microwave for 1–2 minutes on high in a microwave-safe bowl with a paper towel to remove some moisture, or briefly blanch in boiling water for 2 minutes, then drain and dry. This step is optional but improves crispness.
Heat oil for fries
In a small nonstick skillet, pour about 1/2 cup vegetable oil and heat over medium-high until shimmering (around 350°F / 175°C). If oil is hot but not smoking, it's ready.
Fry the fries
Add the dried potato sticks in a single layer (work in very small batches if needed). Fry for 3–5 minutes, stirring occasionally, until edges are golden and centers tender. For extra crispness, fry 1–2 minutes longer. Use a slotted spoon to transfer to paper towels to drain.
Season fries
Immediately sprinkle fries with 1/2 teaspoon salt, 1/8 teaspoon black pepper and 1/8 teaspoon paprika (if using). Toss gently to coat.
Keep warm
Keep fries warm with the shrimp in a low oven (200°F / 90°C) if needed and serve alongside the fried shrimp.
