Make the patty mix

In a large bowl combine ground brisket and ground chuck. Add kosher salt, black pepper and Worcestershire sauce. Gently mix with your hands until just combined — do not overwork to keep burgers tender. Divide into 4 equal portions and gently form into 3/4-inch thick patties slightly larger than buns (they will shrink as they cook). Press a shallow dimple in the center of each patty to prevent doming.

Cook the patties

Heat a large cast-iron skillet or heavy pan over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat. When oil is shimmering, add patties (work in 2 batches if necessary). Cook without moving until a deep brown crust forms, about 3–4 minutes. Flip and cook 2–3 minutes more for medium (adjust time to desired doneness). In the final 30–60 seconds of cooking, place a slice of American cheese on each patty and cover the pan to melt the cheese. Remove patties to a warm plate and tent with foil.

Cheese & toppings

Prep toppings while patties cook: wash and dry lettuce leaves, slice tomato into 4 even slices, and separate onion rings. Spread 1 teaspoon mayonnaise on each bottom bun and 1/2 teaspoon mustard on each top bun (adjust to taste). Arrange 2 pickle slices per bottom bun on top of mayo. Keep toppings ready to assemble.

Toast buns: melt 2 teaspoons butter in a clean skillet over medium heat. Place split buns cut-side down and toast until golden, about 1–2 minutes. Set toasted buns aside, cut sides up.

Sauces (buffalo, sweet & spicy honey glaze, BBQ, Korean)

If using store-bought sauces, have them warmed slightly (20–30 seconds in microwave) or at room temperature. If making quick sweet & spicy honey glaze: whisk together 4 tbs sweet & spicy honey glaze (or 3 tbs honey + 1 tbs Sriracha), 1 tsp soy sauce and a pinch of black pepper. For Korean gochujang-style sauce: combine 3 tbs gochujang, 1 tsp soy sauce and 1/2 tsp toasted sesame oil; stir until smooth. Taste and adjust heat/sweetness. Reserve sauces in small bowls for finishing or for guests to choose their style.

To finish burgers with chosen sauce: brush 1 tablespoon of BBQ, honey glaze, buffalo or Korean sauce onto the cooked cheeseburger patty right after cheese has melted. For a layered approach, you can put mayo on the bottom bun, patty with cheese and sauce, then lettuce, tomato, onion, pickles and top bun with mustard.

Fries

Prepare potatoes: cut potatoes into 1/3–1/2-inch fries. Rinse in cold water until water runs clear to remove starch. Pat completely dry with a clean kitchen towel. If using cornstarch for extra crisp, toss dried fries with 1 teaspoon cornstarch to lightly coat.

Cook fries (oven-roast method): Preheat oven to 425°F (220°C). On a rimmed baking sheet, toss fries with 2 tablespoons oil (reserve remaining oil) and spread in a single layer without crowding. Roast 20 minutes, flip fries and roast another 10–15 minutes until golden and crisp. Season immediately with kosher salt and smoked paprika. Alternatively, for deep-frying: heat oil in a deep pot to 325°F (163°C) for first blanch (3–4 minutes) then raise to 375°F (190°C) to finish until golden, drain on paper towels and season.

Finish and garnish: toss fries with chopped parsley if desired and keep warm until serving.

Finish & assembly

Assemble burgers: place mayo-coated bottom bun on plate, add lettuce leaf, then the cheese-topped patty brushed with your chosen sauce. Add tomato slice, onion, pickles and spread mustard on the inside of the top bun; place top bun onto burger.

Serve: plate burgers with a generous portion of fries. Offer extra sauces (buffalo, sweet & spicy honey glaze, BBQ, Korean) on the side for dipping. Serve immediately while hot.
