Pour 4.5 L of high-quality Chardonnay juice into a sanitized 6 L fermenter. Top with 0.5 L neutral white wine if you need to make volume to 5 L while preserving balance.

Measure starting specific gravity (SG) and temperature. Target starting SG ~1.080–1.090 for a fuller-bodied Chardonnay (will ferment to ~13.5–14% ABV depending on yeast). Record these values.
Fermentation and Yeast Management

Warm the must to 18–20°C (64–68°F) if it’s cooler. Rehydrate the chosen wine yeast per manufacturer instructions (typically in 10× dry weight warm water with Go-Ferm) and then pitch into the must.

Rehydrate the MLF culture per supplier directions and add 1 tsp MLF nutrient if recommended. Keep temperature warm for MLF, about 18–22°C (64–72°F).
