Prep Vegetables

    Wash and dry

    Thoroughly wash all vegetables under cold running water. Use a clean kitchen towel or salad spinner to dry leafy greens, herbs, and other items so the platter stays crisp and fresh.

    Trim and cut carrots and celery

    If using large carrots, peel if desired and cut into sticks about 3–4 inches long. Trim celery into similar-length sticks. Place in a bowl of cold water for 10 minutes if you want extra crispness, then drain and pat dry.

    Prepare cucumbers and peppers

    Slice cucumbers into 1/4-inch rounds or half-moons (for medium-thick bite). Core and seed the bell peppers, then cut into 1/2-inch-wide strips about 3–4 inches long.

    Slice radishes and tomatoes

    Trim radish tops and slice thinly or halved if they are small. Leave cherry tomatoes whole or halve larger ones. Pat dry if they are wet.

    Break broccoli and cauliflower

    Separate broccoli and cauliflower into bite-sized florets. If you prefer slightly tender florets, blanch them in boiling salted water for 1 minute, then plunge into ice water to stop cooking; drain and pat dry.

    Trim peas and arrange greens

    Trim any stringy ends from sugar snap peas. Arrange mixed greens or lettuce leaves on the serving platter as a decorative bed for the vegetables.

Assemble Platter

    Place dips in small bowls: spoon hummus, ranch dip, and tzatziki (if using) into separate small bowls and place them on the platter or on the board first, spacing them out for easy access.

    Create visual groups: Arrange vegetables in groups or sections around the dips. For example, place carrot sticks in one pile, celery in another, cucumbers in a fan, cherry tomatoes in a small heap, bell pepper strips in color blocks (red, yellow, green), and broccoli/cauliflower florets together. Keep similar colors and shapes together to create contrast.

    Fill gaps with smaller items: Tuck radish slices, sugar snap peas, olives, and feta crumbles into remaining gaps to create texture and color variety. Scatter a few lemon wedges near the tomatoes and fish or cheese bowls for brightness.

    Drizzle and season: Lightly drizzle 1–2 tablespoons of extra-virgin olive oil over the broccoli and cauliflower and sprinkle with a pinch of sea salt and freshly ground black pepper. If using, sprinkle smoked paprika lightly over the hummus and a bit of chopped parsley over the whole platter for garnish.

    Final check: Make sure all vegetables are easy to pick up and that dips are reachable from all sides. Wipe any stray bits from the platter edge and serve immediately or cover and refrigerate until serving (up to 4 hours).
