    Prep and mix

    Finely mince or grate garlic. In a medium bowl combine 3 tbs olive oil, 2 tbs soy sauce, 2 tbs fresh lemon juice, minced garlic, 1 tsp smoked paprika, 1/2 tsp ground cumin, 1 tsp honey, 1 tsp salt and 1/2 tsp black pepper. Whisk until smooth.

    Cut and marinate chicken

    Trim excess fat from chicken thighs and cut into 1 to 1 1/2-inch cubes. Add chicken to the marinade, toss to coat thoroughly, cover and refrigerate for at least 30 minutes and up to 4 hours (longer will make meat more tender and flavorful).

    Prep and mix

    Mince the garlic. In a separate bowl combine 2 tbs olive oil, 1 tbs balsamic vinegar, 1 tbs soy sauce (or Worcestershire), minced garlic, 1 tsp Dijon mustard, 1/2 tsp dried oregano, 1/4 tsp red pepper flakes, 3/4 tsp salt and 1/2 tsp black pepper. Whisk to emulsify.

    Slice and marinate steak

    Trim the flank or skirt steak of silver skin and slice across the grain into 1/2 to 3/4-inch strips. Add steak strips to the marinade, toss, cover and refrigerate for at least 30 minutes and up to 4 hours. If refrigerated longer, bring to cool room temperature 20–30 minutes before grilling.

Skewers & Vegetables

    Prepare vegetables and skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Core and cut bell peppers into 1 1/2-inch squares. Peel and cut red onion into wedges roughly the same size. Slice zucchini into 1/2-inch thick half-moons. Keep cherry tomatoes whole.

    Assemble skewers

    Preheat grill or grill pan to medium-high heat (about 400–450°F / 200–230°C). Thread chicken cubes and vegetable pieces onto skewers, alternating protein and vegetables for even cooking; plan roughly 3–4 chicken pieces per skewer with vegetables between. Thread steak strips folded or doubled so they sit snugly on skewers, also alternating with vegetables. Leave a little space between pieces so heat circulates. Lightly brush assembled skewers with 1 tbs olive oil and season with a pinch of salt and pepper.

Grilling & Finishing

    Grill skewers

    Place chicken skewers on the hottest part of the grill or grill pan. Cook for 10–12 minutes, turning every 2–3 minutes so all sides get good char and chicken reaches an internal temperature of 165°F (74°C). For steak skewers, grill 6–9 minutes total depending on thickness for medium-rare to medium (internal temp 130–140°F / 54–60°C), turning every 2–3 minutes. If cooking both, you can stagger or use different zones: chicken on slightly cooler zone after initial sear if needed.

    Rest and finish

    Remove skewers from the grill and let rest on a tray for 5 minutes. Sprinkle chopped parsley over skewers, squeeze lemon wedges over top to taste, and finish with the 1/4 tsp salt and 1/4 tsp black pepper evenly distributed. Serve warm.
